Fine Dining Restaurant Manager

Overview:

Eight, proudly ranked No. 2 in the 2026 North America’s 50 Best Restaurants, is seeking an experienced and passionate Fine-Dining Restaurant Manager to lead our restaurant operations.

In this role, you will oversee the day-to-day restaurant operations while driving revenue growth, maintaining exceptional standards of hospitality, and ensuring an outstanding guest dining experience. You will play a key role in building and developing one of the strongest restaurant teams in Canada, creating a culture of excellence, professionalism, teamwork, and continuous improvement.

Your leadership will set the tone for operational excellence, ensuring that our service standards are consistently upheld while developing and empowering our team. You will work closely with the Chef Owner and management team to achieve business objectives, strengthen guest satisfaction, and continue elevating Eight's position within the Canadian and international culinary scene.

Responsibilities:

  • Lead daily restaurant operations, ensuring seamless service and smooth coordination across all areas of the restaurant.
  • Maintain and continuously improve the highest standards of hospitality, guest service, cleanliness, presentation, and operational excellence.
  • Develop and implement strategies to increase revenue, improve profitability, and strengthen overall restaurant performance.
  • Develop initiatives to enhance guest satisfaction and create memorable, personalized dining experiences.
  • Lead, recruit, train, coach, and develop team members to build a high-performing and motivated hospitality team.
  • Foster a positive team culture based on professionalism, accountability, collaboration, respect, and continuous development.
  • Monitor daily food costs, labour costs, sales performance, and staff performance, providing regular reports and insights to the Chef Owner and management team.
  • Work closely with the Chef Owner and management team to identify operational opportunities and implement improvements.
  • Oversee beverage and product inventory, with particular attention to wine, sake, whisky, beer, and other beverage programs.
  • Monitor purchasing, inventory levels, product quality, and cost control to support efficient restaurant operations.
  • Develop and maintain strong relationships with vendors and industry partners.
  • Oversee the overall presentation and atmosphere of the restaurant, ensuring that every aspect of the guest experience reflects Eight's standards and brand identity.
  • Utilize POS and restaurant management systems effectively for sales tracking, reporting, staff management, and operational analysis.
  • Conduct regular staff evaluations, coaching sessions, pre-service meetings, and training programs to support continuous professional development.
  • Address guest feedback and service concerns professionally and effectively, ensuring appropriate service recovery and maintaining strong guest relationships.
  • Support revenue management through effective table management, reservation strategy, guest relations, and maximizing restaurant capacity.
  • Stay informed about hospitality trends, industry developments, and evolving guest expectations within the Canadian and international fine dining landscape.

Qualifications & Skills:

  • Proven experience in fine dining, luxury hospitality, or high-end restaurant operations, preferably in a management or leadership position.
  • Demonstrated commitment to providing exceptional guest service and creating memorable dining experiences.
  • Proven leadership experience with the ability to recruit, train, motivate, and develop high-performing hospitality teams.
  • Demonstrated experience in revenue management and driving restaurant sales performance.
  • Strong financial and business acumen, including knowledge of food cost, labour cost, budgeting, forecasting, and operational reporting.
  • Strong negotiation and relationship-building skills, with the ability to develop positive relationships with vendors, team members, guests, and industry partners.
  • Exceptional communication and interpersonal skills.
  • Bilingual or multilingual abilities are considered an asset, particularly when working with a diverse team and international clientele.
  • Strong organizational skills with the ability to prioritize multiple responsibilities and maintain composure in a fast-paced restaurant environment.
  • Proficiency with POS systems and restaurant management software.
  • Strong understanding of restaurant operations, service standards, pricing strategies, sales initiatives, and guest experience management.
  • Demonstrated ability to coach and train staff in hospitality, service excellence, product knowledge, and operational procedures.
  • Proven ability to analyze operational and financial information and translate it into practical improvements.
  • Strong knowledge of, or a willingness and enthusiasm to learn about, sake, wine, whisky, and other beverage programs.
  • A genuine passion for food, beverage, hospitality, and continuous learning.
  • A professional, positive, and hands-on leadership approach with exceptional attention to detail.
