Head Pastry Lead & Pastry Cooks

New Independent Specialty Café | Lethbridge, AB

Full-Time & Part-Time

Expected Opening: November / December 2026 (subject to construction timelines)
Early Start Available: Summer/Fall 2026 for menu development and pre-opening planning (Head Baker)

Join Us from the Beginning

We're an independently owned specialty café opening in Lethbridge in Fall/Winter 2026, built around exceptional coffee, thoughtfully crafted food and pastries, and genuine hospitality. Our vision is to become a gathering place in the community, where people can connect, gather, and slow down.

We're looking to get a head start on hiring key members of our team and are currently seeking a passionate Head Pastry Lead and Pastry Cooks who take pride in their craft and are excited by the opportunity to build something from the ground up.

From the pre-opening phase through opening day and beyond, you'll play an important role in shaping our bakery program. We're looking for people who enjoy collaborating, sharing ideas, maintaining high standards, and continually learning and improving alongside a supportive team.

Responsibilities

Head Pastry Lead

  • Lead the development of the bakery and pastry program.
  • Research, test and refine recipes during the R&D phase.
  • Help plan equipment, workflow and production systems.
  • Develop production schedules and SOPs.
  • Recruit, train and mentor bakery staff.
  • Oversee daily bakery operations.
  • Maintain quality, consistency and food safety standards.
  • Manage inventory and ordering.
  • Continue developing seasonal menu items after opening.

Pastry Cooks

· Prepare and bake pastries, breads, cookies, cakes, and other bakery items according to recipes and production schedules.

· Assist with dough preparation, mixing, shaping, laminating, baking, finishing, and decorating products.

· Maintain consistency and attention to detail throughout daily production.

· Prepare ingredients and organize workstations for efficient production.

· Package, label, and rotate products as needed.

· Monitor product quality and communicate any concerns to the Head Baker.

· Assist with inventory, stock rotation, and receiving deliveries.

· Maintain a clean, organized, and food-safe workspace.

· Work collaboratively with the bakery team to meet daily production goals.

· Support seasonal menu changes and learn new techniques as the bakery evolves.

What We're Looking For

  • Experience in a commercial bakery or pastry kitchen. (preferred not required)
  • Strong scratch baking and pastry skills.
  • Passion for recipe development and continuous improvement.
  • Organized, dependable and collaborative.
  • Someone who enjoys mentoring others and building strong teams.

· Comfortable with early mornings and physically demanding work, including lifting, standing for extended periods, and repetitive tasks.

· A positive attitude and willingness to learn.

· Someone who values teamwork, takes pride in their work, and wants to grow with the business long-term.

  • Most importantly a positive attitude, and someone who enjoys what they do.

Compensation
