Job Summary

The Production Roaster is responsible for executing daily coffee roasting activities in accordance with established roast profiles, quality standards, and production schedules. This role focuses on consistent execution, accurate documentation, and adherence to food safety and operational procedures.

The Production Roaster works closely with the Roasting Supervisor to ensure roasted coffee meets Fratello Coffee Roasters’ quality expectations and production requirements, while maintaining a clean, safe, and organized roasting environment.

Areas of Responsibility

Roasting Execution

  • Roast coffee according to approved roast profiles and daily production schedules
  • Operate roasting equipment safely and consistently in accordance with training and SOPs
  • Monitor roast curves, temperatures, airflow, and timing to ensure consistency
  • Make real-time adjustments within approved parameters to maintain quality
  • Accurately identify and report roast deviations or equipment issues to the Roasting Supervisor
  • Ensure roasted coffee is cooled, labeled, and transferred appropriately post-roast

Quality & Consistency Support

  • Follow all quality standards related to roast color, development, and batch consistency
  • Participate in cupping sessions and quality evaluations as required
  • Implement corrective actions as directed by the Roasting Supervisor
  • Support consistency across multiple batches and production runs

Build Assemblies & Documentation

  • Accurately complete roast logs, batch records, and required production documentation
  • Complete build assemblies and production records as trained and directed
  • Ensure all documentation supports traceability, inventory accuracy, and audit readiness
  • Escalate documentation discrepancies or system issues promptly to the Roasting Supervisor

Green & Post-Roast Handling

  • Handle green coffee carefully to prevent contamination or damage
  • Assist with green coffee inspection, preparation, and movement as required
  • Ensure roasted coffee is handled and staged according to established procedures
  • Follow FIFO principles for green and roasted coffee
  • Complete all blending, grinding and portion pack coffee preparation

Food Safety, Sanitation & Equipment Care

  • Follow all food safety, sanitation, hygiene, and GMP procedures applicable to roasting operations
  • Participate in pre-operational checks and scheduled cleaning tasks as assigned
  • Maintain a clean, safe, and organized workstation and shared roasting/green coffee areas
  • Handle products in a manner that protects food safety, traceability, and product integrity
  • Report safety, quality or equipment concerns/repairs immediately to the Roasting Supervisor or Product & Operations Manager

Training, Compliance & Professional Conduct

  • Read, understand, and comply with all roasting-related SOPs and training materials contained in the Roasting Team Training Binder
  • Complete required training and sign all training acknowledgment forms as assigned
  • Follow direction from the Roasting Supervisor and Product & Operations Manager
  • Communicate professionally and respectfully with team members and leadership
  • Support a positive team environment by working collaboratively and avoiding gossip or speculation
  • Escalate quality, safety, or operational concerns directly to the Roasting Supervisor

You’re a great fit if you have:

  • 2+ years of coffee roasting or production roasting experience
  • Strong understanding of roast profiles and batch consistency
  • Experience operating drum roasters or similar production equipment
  • High attention to detail and commitment to quality
  • Comfort working in a fast-paced production environment
  • Ability to follow documented procedures precisely
  • Strong communication and teamwork skills
  • Proficiency with roasting software and production documentation systems
  • Minimum high school education
  • Ability to perform physical tasks associated with roasting operations
