Full job description

Position Summary

We are seeking an experienced Fishmonger with extensive knowledge of handling, cutting, filleting, portioning, and processing a wide variety of freshwater and saltwater fish species. The successful candidate must be skilled in producing high-quality cuts while maintaining food safety, sanitation, and quality standards.

Key Responsibilities

  • Cut, fillet, skin, bone, trim, and portion all types of freshwater and saltwater fish.
  • Process whole fish into customer-ready products according to specifications.
  • Identify various fish species and determine proper cutting and processing methods.
  • Remove scales, bones, skin, and other unwanted portions with minimal product waste.
  • Prepare fish for retail, wholesale, restaurant, and seafood market distribution.
  • Ensure all products meet quality, freshness, and presentation standards.
  • Operate and maintain fish processing equipment, knives, saws, and other cutting tools safely.
  • Monitor product quality, freshness, and proper storage conditions.
  • Follow all food safety, sanitation, HACCP, and workplace health and safety regulations.
  • Always maintain a clean and organized work area.
  • Assist with receiving, inspecting, and storing seafood inventory.

Qualifications & Experience

  • Minimum 3–5 years of experience as a fish cutter, fish processor, or seafood butcher.
  • Proven ability to process and cut all major freshwater and saltwater fish species.
  • Extensive knowledge of fish anatomy, filleting techniques, portion control, and yield maximization.
  • Experience working in seafood processing plants, fish markets, wholesale seafood operations, or commercial kitchens.
  • Strong knife skills and the ability to work efficiently in a fast-paced environment.
  • Knowledge of food handling, sanitation, and seafood safety regulations.
  • Ability to stand for extended periods and lift up to 50 lbs (23 kg).
  • Reliable, detail-oriented, and committed to maintaining high product quality.
  • Must be willing to undergo a criminal background check upon hire

Preferred Qualifications

  • HACCP, Food Safety, or Seafood Handling Certification.
  • Experience with commercial seafood processing equipment.
  • Ability to train and mentor junior fish cutters.

Work Conditions:

  • Warehouse and food production environment.
  • Require working in refrigerated or cold storage areas.
  • Use of personal protective equipment (PPE) as required.
