Job Summary
We are seeking a talented and experienced Jamaican Cook who is experienced with traditional and contemporary Jamaican cuisine. The ideal candidate will thrive in a fast-paced environment and possess an innate understanding of the balance of heat, spice, and flavors that define Jamaican cooking. You will be responsible for preparing, cooking, and presenting a variety of Jamaican dishes to the highest standard, ensuring every plate that leaves the kitchen is a true taste of the islands. Additionally, duties will include washing of dishes, pots and utensils to ensure that the kitchen and work area remains clean, uncluttered and organized.

Responsibilities

  • Food Preparation & Cooking:
  • Expertly prepare and cook a wide range of Jamaican dishes, including but not limited to: Jerk Chicken, Oxtail, Curry Goat, Ackee and Saltfish, Fish, and traditional stews.
  • Masterfully manage the jerk grill or smoker, ensuring authentic smoky flavor and perfect cook on all proteins.
  • Prepare and use traditional Jamaican marinades, rubs, and seasonings (e.g., jerk seasoning, allspice, Scotch bonnet peppers) from scratch.
  • Cook and season rice and peas, fried dumplings, and other staple sides to perfection.
  • Kitchen Operations:
  • Set up and stock your station with all necessary ingredients and equipment.
  • Work collaboratively with the kitchen staff during peak service, maintaining speed, accuracy, and communication
  • Ensure all dishes are prepared according to established recipes and presentation standards.
  • Monitor food stock levels and assist in inventory management and ordering.

Qualifications

  • Strong leadership qualities with the ability to manage multiple tasks under pressure
  • Experience in hospitality or restaurant environments is highly desirable
