Position Summary

The Executive Chef will provide strategic culinary leadership for Ancora False Creek and Ancora Ambleside, with the opportunity to support future restaurant concepts as the organization grows.

Reporting to ownership, the Executive Chef is responsible for the overall culinary vision, operational excellence, financial performance, and leadership of all kitchen operations. This role will ensure consistency in quality, profitability, team development, and guest experience while driving innovation across all locations.

Key Responsibilities

Culinary Leadership

· Lead the culinary direction across all restaurant locations.

· Develop seasonal menus and signature offerings.

· Maintain exceptional food quality, consistency, and presentation.

· Drive innovation while balancing operational efficiency and profitability.

Operations & Financial Performance

· Oversee all kitchen operations and culinary standards.

· Manage food and labour costs, purchasing, inventory, and waste reduction.

· Develop and maintain recipes, kitchen systems, and operating procedures.

· Ensure compliance with food safety and health regulations.

Team Leadership

· Recruit, mentor, and develop high-performing culinary teams.

· Foster a culture of accountability, collaboration, and continuous improvement.

· Support leadership development and succession planning across all kitchens.

Guest Experience & Brand

· Collaborate with front-of-house leadership to deliver exceptional guest experiences.

· Support marketing initiatives, special events, media opportunities, and chef collaborations.

· Help strengthen and evolve the Ancora culinary brand.

Success Measures

Performance will be evaluated based on:

· Food and labour cost management

· Guest satisfaction and online reputation

· Culinary innovation and menu execution

· Team engagement and retention

· Operational consistency across locations

· Overall kitchen profitability

Qualifications

The ideal candidate will have:

· 8–10+ years of progressive culinary leadership experience in premium restaurants.

· Proven success leading multi-unit or high-volume culinary operations.

· Strong experience in menu development, financial management, and team leadership.

· Experience with premium seafood and contemporary cuisine.

· Experience in Italian cuisine is considered an asset.

· A passion for mentoring teams and delivering exceptional dining experiences.
