Job Overview

The Assistant Food & Beverage Manager is a department leader responsible for supporting the successful operation of the restaurant, banquet facilities, meeting spaces, lounge, bar services, and other food and beverage outlets. This role partners with the Food & Beverage Manager to ensure the consistent delivery of exceptional guest experiences while maintaining Hilton Garden Inn and Bona Hospitality service standards.

This leadership-focused position provides operational oversight across all front-of-house food and beverage operations through a strong and visible floor presence. The Assistant Food & Beverage Manager leads, coaches and develops restaurant, banquet and bar team members while ensuring service, productivity and quality standards are consistently achieved.

Working under the direction of the Food & Beverage Manager, the Assistant Food & Beverage Manager assumes responsibility for delegated operational areas including banquet execution, staffing, inventory control, scheduling, training, and special projects. In the absence of the Food & Beverage Manager, this position assumes responsibility for the daily operation of the department and ensures continuity of leadership.

Success in this role requires exceptional organizational skills, sound judgement, attention to detail, and the ability to balance the demands of daily restaurant service with the execution of meetings, catered functions and special events.

Duties

This position is responsible for the following tasks:

Provide visible operational leadership across all Food & Beverage outlets by supporting daily operations, leading by example, and coaching team members to deliver exceptional guest service, professionalism and teamwork

Assume operational responsibility for the department in the absence of the Food & Beverage Manager

Assist with the implementation of departmental initiatives, service standards and operating procedures including brand training and provincial certifications

Monitor labour productivity and staffing levels to ensure efficient operations

Participate in weekly BEO meetings as required

Review Banquet Event Orders (BEOs) and ensure effective communication with the Sales, Culinary, Banquet Captain, and Banquet Team to support successful event execution

Coordinate the successful execution of banquet functions, meetings and catered events

Ensure meeting rooms and banquet spaces are prepared according to client specifications

Meet with event organizers before, during and after functions to ensure expectations are met and service issues are resolved promptly

Conduct to reinforce service standards, communicate operational priorities, and support team performance

Assist with recruitment, interviewing, onboarding, scheduling and performance management

Foster a culture of accountability, collaboration and continuous improvement

Ensure guests receive prompt, professional and personalized service

Respond promptly to guest concerns, resolve service issues and monitor guest satisfaction to maintain exceptional service standards

Ensure team members maintain comprehensive knowledge of menus, beverage offerings, ingredients, allergens and allergy protocols

Monitor inventory levels and assist with ordering beverage, banquet, and operational supplies

Support monthly inventory counts and cost control initiatives

Assist with balancing bar floats and maintaining beverage controls

Oversee point-of-sale operations utilizing Oracle Simphony, PEP and other hotel systems, including refunds, voids and service recovery

Ensure compliance with all health regulations, food handling standards, Smart Serve requirements and workplace safety legislation

Maintain compliance with Bona Hospitality policies, Hilton brand standards and the Collective Agreement

Ensure department cleanliness, organization and equipment maintenance standards are consistently maintained

Promote positive communication and collaboration across all hotel departments.

Complete operational reports, inventories and other administrative tasks as related to the restaurant and catering operation

Other tasks as required

Qualifications

Post-secondary education in Hospitality Management, Hotel Management, Event Management, Business, or a related field is considered an asset

Minimum of two (2) years of leadership experience in restaurant, hotel, banquet, or food and beverage operations

Previous experience supervising both restaurant and banquet operations is strongly preferred

Demonstrated leadership, coaching, performance management, and progressive discipline experience

Experience working in a unionized environment with a sound understanding of collective agreements is considered an asset

Exceptional guest service skills with the ability to build positive relationships with a wide variety of guests and team members

Excellent interpersonal, verbal, and written communication skills

Strong organizational, time management, multitasking, and problem-solving abilities with proven success in a fast-paced environment

Demonstrated conflict resolution and sound decision-making skills

Strong working knowledge of Microsoft Office (Word, Excel, Outlook, and PowerPoint)

Experience with Oracle Simphony, Delphi, PEP and other hotel management systems is considered an asset

Working knowledge of food and beverage operations, including service standards, banquet execution, inventory control, labour management, and food safety practices

Knowledge of wine, spirits, bartending, food preparation, and various styles of food and beverage service is considered an asset

Smart Serve Certification is required

Food Handler Certification is required

Bilingualism (English and French) is considered an asset

Ability to work a flexible schedule including days, evenings, weekends, and holidays

Ability to stand and walk for extended periods and lift up to 50 lbs
