At Onua Bakery & Café, we are building one of Ottawa’s most distinctive artisan bakeries—bringing together artisan bread techniques, natural fermentation, and West African bakery traditions.

From naturally fermented sourdough and enriched breads to African sweet breads and handcrafted baked goods, our goal is simple: create exceptional products that customers remember and come back for.

We are looking for an experienced Artisan Bread Baker who takes pride in their craft and wants to play a meaningful role in a growing independent bakery.

This is not a repetitive production role. This is for someone who enjoys working with dough, improving systems, and helping shape a bakery.

What You’ll Do

  • Prepare and bake artisan breads and naturally fermented products
  • Mix, scale, shape, proof, and bake dough to production standards
  • Produce sourdough and enriched bread products
  • Support production of African-style breads (training provided where required)
  • Help improve consistency, production flow, and quality
  • Support production planning and inventory organization
  • Maintain recipes, production records, and food safety standards
  • Support and coach junior bakers when appropriate

Must Have

  • 2+ years of bakery experience (artisan, bread, sourdough, or production bakery)
  • Experience with dough mixing, shaping, proofing, and baking
  • Comfortable working early mornings
  • Ability to maintain quality and consistency in a fast-paced environment
  • Strong teamwork and communication

Strong Assets

  • Sourdough and natural fermentation experience
  • Experience in artisan or independent bakeries
  • Bread production leadership
  • Viennoiserie exposure
  • French language skills
