VOTRE MANDAT
- Préparer les repas conformément aux normes de portions et de qualité spécifiées dans les recettes. Contrôlez les aliments pour l’utilisation d’une ou plusieurs sections respectives afin de minimiser le gaspillage.
- Être spécialisé dans la fine cuisine italienne et le petit-déjeuner, est capable de travailler avec un volume de travail élevé.
- Préparer les repas pour les sections respectives (restaurant, points de vente, etc.) et participer à toutes les activités de cuisine pour garantir que les invités reçoivent des aliments de haute qualité en temps opportun.
- Coordonner le bon service en ce qui concerne le pass et le ramassage de la nourriture.
- Organiser la journée de préparation pour les cuisiniers et les restaurants ; superviser la mise en place et la préparation de la ligne.
- Informer le superviseur des articles en faible stock ou commander les aliments nécessaires. Aider à recevoir les articles et à faire l'inventaire au besoin.
- Maintenir des normes d'assainissement et de propreté dans la cuisine qui respectent ou dépassent les exigences d'inspection et d'hôtel du conseil de santé de l'État et local.
- Signalez tout équipement dangereux ou défectueux au superviseur.
- Participer à la formation du personnel de cuisine ; s’assurer que toutes les tâches du cuisinier ont été accomplies pendant le quart de travail.
- Capacité à exécuter des fonctions avec un minimum de supervision
- Peut aider en effectuant un lave-vaisselle/lave-vaisselle ou d'autres tâches de cuisine, selon les besoins.

PROFIL REQUIS
- Diplôme d'études secondaires ou équivalent, 2 ans d'expérience en préparation culinaire, ou combinaison équivalente d'études et d'expérience en préparation culinaire. Certification de formation ou d’apprentissage culinaire ou certification Sceau rouge
- Ce travail nécessite la capacité d'effectuer les tâches suivantes :
- Transporter ou soulever des objets pesant jusqu'à 50 livres
- Rester immobile pendant de longues périodes
- Se lever et se déplacer dans la cuisine
- Manipuler des aliments, des objets, des produits et des ustensiles
- Se pencher, se baisser, s'agenouiller
- Très organisé et capable de travailler sous pression
- Les compétences en communication (écrite et orale) sont utilisées une grande partie du temps lors des interactions avec les autres cuisiniers, les serveurs ou les invités.
- Les capacités de lecture et d’écriture sont souvent utilisées lors de la préparation de repas à partir d’une recette.
- Cette personne utilise ses capacités de résolution de problèmes et de raisonnement
- Peut être amené à travailler la nuit, le week-end et/ou les jours fériés

YOUR MANDATE
Prepare delicious breakfast meals and fine dining Italian cuisine in accordance with portion and quality standards specified in recipes. Control food for a respective section(s) usage to minimize waste.
Duties and Responsibilities
- Prepare breakfasts and fine dining Italian cuisine for respective section(s) (restaurant, outlets, etc.) and assist in all kitchen activities to ensure that guests receive high quality food items in a timely manner.
- Coordinate the smooth service in relation to the pass and pick-up of food.
- Organize the day’s prepping for the cooks and restaurants; supervise line set-up and prepping.
- Advise supervisor of low inventory items or may order necessary food items. Assist in receiving items and taking inventory as needed.
- Maintain sanitation and cleanliness standards in the kitchen area that meet or exceed the state and local Health Board inspection and hotel requirements.
- Report all unsafe or malfunctioning equipment to the supervisor.
- Assist in the training of kitchen staff; ensure that all cook’s duties have been performed during shift.
- Ability to perform functions with minimal supervision
- May assist by performing ware washer/dishwasher or other kitchen duties as needed.
- May assist with other duties as assigned
- In carrying out your duties you will follow all Carma Hospitality standards.
REQUIRED PROFILE
High school diploma or equivalent, plus 2 years of experience in food preparation, or equivalent combination of education and food preparation experience. Certification of culinary training or apprenticeship or Red Seal CertificationThis job requires ability to perform the following:
- Carrying or lifting items weighing up to 50 pounds
- Remain stationary for extended periods of time
- Standing up and moving about the kitchen
- Handling food, objects, products and utensils
- Bending, stooping, kneeling
- Knowledge of Italian cuisine and sauces.
Other:
- Communication skills (written and oral) are utilized a significant amount of time when interacting with the other cooks, wait staff or guests.
- Reading and writing abilities are utilized often when preparing meals from a recipe, when assisting in the scheduling of the kitchen staff, or when keeping track of inventory.
- This person utilizes problem solving and reasoning abilities
- Mathematical skills, including basic math, percentages, quantities, and variances are used frequently.
- Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or provincial government agency.(MAPAQ)
- May be required to work nights, weekends, and/or holidays
