Full job description

MSSM Edmonton is sister restaurant of Sushi Masaki Saito in Toronto by the first and the only Michelin 2 Star sushi chef. MSSM group meant to combine traditional and authentic Edomae omakase with a modern twist by apply Chef Masaki saito Edoame style sushi technique to ultimately bring out the best flavour of the ingredients. Today, our goal is to enhance the competitiveness and accessibility of this authentic Japanese Omakase dining experience to customers.

Job Duties and Responsibilities

  • Receive and store delivered items properly to maintain inventory and prevent spoilage.
  • Keep track of food inventory and report any discrepancies or issues to management.
  • Maintain a positive and friendly attitude towards customers and colleagues.
  • Follow company workplace conduct of code to maintain a professional image.
  • Prepared ingredients, rice, fishes.
  • Expertly cutting, slicing, and filleting different types of fish.
  • Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard.
  • Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
  • Maintaining a clean work environment in order to prevent food contamination.
  • Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use.
  • Communicating with server staff to ensure that special requests and food allergy considerations are met.

Qualifications

  • At least 2 years experience in making nigiri sushi.
  • Valid food handler's license.
  • Sound knowledge of food safety regulations.
  • The ability to work under pressure.
  • The ability to stand for long periods of time.
  • Excellent time-management skills.
  • Exceptional customer service skills.
  • Knowledge of Japanese is an asset.
  • Omakase chef experience will be considered as a great asset.
  • Passionate and knowledgeable with Japanese cuisine, providing recommendations and creating excellent guest experiences
  • Be on time and a sense of urgency, attentive, reliable, responsible, organize and have a positive attitude and a friendly personality.
  • Good communication English skills

Licence/Certification:

  • Food Safe, Food Handler or equivalent (preferred)

Work conditions and physical capabilities (included but not limited to):

  • Fast-paced environment
  • Standing for extended period

Job Type: Full-time

Pay: $55,000.00-$85,000.00 per year

Schedule:

  • Day shift
  • Night shift
  • Weekends as needed

Experience:

  • Omakase Chef: 1 year (preferred)
  • nigiri sushi making: 2 years (preferred)
