Sous Chef – Sushi

At Ryu, we believe great sushi is built on discipline, repetition, and an obsession with detail.

We are looking for a Sushi Sous Chef who is eager to learn, hungry to grow, and committed to mastering the craft at the highest level. This is not simply a production role. The right candidate will work directly alongside our Head Chef, receiving hands-on training in advanced sashimi, nigiri, fish butchery, knife skills, rice preparation, and the standards required in a premier sushi restaurant.

For the right person, this position offers a clear path toward becoming a Head Chef within our organization.

Responsibilities

  • Work directly with the Head Chef to develop advanced sushi skills
  • Prepare and execute sashimi, nigiri, maki, and specialty items to exacting standards
  • Oversee daily kitchen preparation and mise en place
  • Ensure consistency, quality, cleanliness, and organization throughout the kitchen
  • Assist with ordering, inventory management, and product rotation
  • Train and support junior kitchen team members
  • Maintain food safety and sanitation standards
  • Help manage food costs and reduce waste
  • Lead by example during service and perform well under pressure

Qualifications

  • Experience in a sushi restaurant or high-level professional kitchen
  • Strong knife skills and attention to detail
  • Ability to work quickly and efficiently without sacrificing quality
  • Strong organizational and communication skills
