Job Purpose:
As a Sushi Chef, you are the culinary heart of our restaurant. Your role is crucial in maintaining the highest standards of sushi preparation, ensuring consistency in our offerings, and advocating for our brand through exemplary service and product quality. You will lead by example, manage inventory, and uphold the integrity of our culinary standards.
Duties and Responsibilities:

  • Quality Assurance: Ensure all dishes meet our high standards before they leave the kitchen.
  • Menu Mastery: Learn and understand our entire menu to perfection.
  • Waste Management: Minimize food waste through efficient use of ingredients.
  • Fish Preparation: Skillfully clean, filet, and cut various fish and mollusks.
  • Sushi Making: Prepare nigiri, handrolls, sashimi, and other sushi items.
  • Rice Preparation: Follow our specific process for washing, cooking, and cutting sushi rice.
  • Inventory Management: Oversee the ordering and accuracy of inventory, ensuring we have the right stock levels.
  • Training: Assist in training kitchen staff.
  • Cleanliness: Maintain a clean workspace, including post-shift cleanup and proper food storage.
  • Compliance: Adhere to all health, safety, and labor laws.

Qualifications:

  • Education: High school diploma or equivalent (preferred).
  • Experience: At least 3 years of sushi-making experience, with knowledge of Japanese cuisine.
  • Attitude: Positive, friendly, and professional demeanor.
  • Exceptional customer service.
  • Ability to educate staff and customers about sushi.
  • Strong communication skills under pressure.
  • Basic math proficiency.
  • Teamwork and leadership qualities.

Working Conditions:

  • Indoor environment with varying noise levels based on restaurant traffic.
