Full job description

Hinotori Sushi Lounge is a new sushi restaurant opening in Parry Sound, Ontario. We are seeking experienced Sushi Cooks to join our opening team.

This is a hands-on production position for someone who is experienced preparing sushi, working with fresh seafood, producing rolls efficiently, and following established recipes, specifications, portions, and presentation standards.

Previous professional experience as a sushi cook in a sushi restaurant is required. This position is not suitable for amateurs or enthusiasts

Responsibilities

  • Prepare sushi rolls, nigiri, sashimi and other menu items according to established recipes and specifications
  • Prepare and properly season sushi rice
  • Prepare and portion fish, seafood, vegetables, sauces and other sushi ingredients
  • Maintain consistent portioning, rolling, cutting and plating standards
  • Follow photographs and written specifications for finished menu items
  • Maintain an organized and fully stocked sushi station
  • Complete daily preparation lists
  • Properly receive, store, rotate and handle seafood and other perishable products
  • Monitor freshness, quality and product waste
  • Follow food-safety, sanitation and temperature-control procedures
  • Maintain a clean and sanitary workstation throughout service
  • Assist with opening and closing duties for the sushi station
  • Work collaboratively with the Kitchen Manager and the remainder of the culinary team
  • Participate in pre-opening training and menu preparation prior to launch

Qualifications

  • Previous professional sushi preparation experience required
  • Strong sushi rolling and basic seafood knife skills
  • Understanding of sushi rice preparation and seasoning
  • Ability to follow standardized recipes and specifications
  • Strong attention to cleanliness, consistency and presentation
  • Ability to work efficiently during busy service periods
  • Reliable and able to work independently
  • Valid Ontario Food Handler Certificate or willingness to obtain one prior to employment

This position is ideal for someone who enjoys sushi preparation and wants to be part of the opening team of a completely new restaurant concept in Parry Sound.

Expected Hours: Approximately 35–44 hours per week
Compensation: $22–$28 per hour, based on experience

Pay: $22.00-$28.00 per hour
