Join our team at Casino Nanaimo as the Food & Beverage Manager — a hands‑on, operationally focused leadership role responsible for overseeing both Front of House (FOH) and Back of House (BOH) functions within a casino environment. This role blends culinary oversight, bar and beverage management, and daily service leadership to ensure seamless operations and exceptional guest experiences.

The Food & Beverage Manager is accountable for the overall performance, profitability, and service standards of the F&B department. This includes supervising daily operations, managing staffing levels, supporting culinary execution, and ensuring compliance with company policies and regulatory requirements. The role leads by example, fosters a positive learning environment, and maintains a safe and welcoming workplace for all team members.

Key Accountabilities

  • Provides leadership, direction, and mentoring to both FOH and BOH teams, ensuring alignment with service and culinary standards
  • Oversees daily operations across the restaurant, gaming floor service points, and kitchen to maintain smooth, efficient service
  • Manages all F&B service flow, including bar operations, food delivery, and coordination between FOH and BOH
  • Develops and manages departmental budgets, monitors labour, food, and beverage costs, and analyzes P&L statements to ensure profitability
  • Collaborates closely with the culinary team on menu development, food quality, portion control, and BOH operational standards
  • Reviews pricing strategies, oversees inventory procurement, and manages vendor relationships and negotiations
  • Develops Performance Objectives and delivers timely Performance Evaluations for direct reports
  • Provides F&B expertise to cross‑department teams and vendor partners, supporting operational decisions and guest service initiatives.
  • Approves all department‑related POs and invoices and ensures accurate financial tracking
  • Conducts monthly inventory counts for both food and beverage
  • Performs regular inspections of FOH and BOH areas to ensure consistency, cleanliness, and adherence to safety standards; reports maintenance or supply needs
  • Liaises effectively with all operational departments to support smooth casino operations
  • Builds strong working relationships with guests, ownership, and team members
  • Ensures compliance with licensing laws, food safety, liquor regulations, health and safety standards, and other statutory requirements
  • Manages additional initiatives and projects as required


Education and Qualifications

  • Minimum 3 years of F&B leadership experience, including direct oversight of culinary/BOH operations
  • Strong culinary knowledge and experience managing bar and beverage service
  • Solid understanding of food safety, liquor regulations, and BOH operational standards
  • Demonstrated ability to manage budgets, inventory, and cost controls
  • Excellent leadership, coaching, and communication skills
  • FOODSAFE Level 1 and Serving It Right required
  • Strong verbal and written communication skills
  • Experience with inventory systems, labour management tools, and restaurant POS software
  • Strong business acumen and ability to analyze financial performance
  • Proficiency in MS Office
  • Ability to successfully obtain a Gaming License
