Full-Time breakfast/lunch cook role available. We are also looking for a p/t & f/t dishwasher & prep cook.

Hoco Hotels is seeking skilled, reliable, and motivated Line Cooks to join our culinary team at Casa 1881, located within The Windsor Hotel in Stratford, Ontario.

This is an opportunity to be part of a refined dining room and bar concept, working in a focused, quality-driven kitchen environment. We are looking for cooks who take pride in consistency, teamwork, and delivering high-quality dishes in a fast-paced setting.

Schedule Requirements

  • Full-time position averaging approximately 37.5–42 hours per week
  • Flexible schedule required, including evenings, weekends, and holidays
  • Your typical shift will be 6:30-2:30 pm and you will be required to work on weekends during the peak season.

Key Responsibilities

Culinary Execution

  • Prepare and cook menu items to recipe and presentation standards
  • Ensure consistency, quality, and proper portioning at all times
  • Execute service efficiently in a fast-paced environment
  • Maintain clean, organized, and well-stocked stations

Prep & Kitchen Organization

  • Complete daily prep tasks and station setup
  • Follow prep lists and maintain strong organization throughout service
  • Properly label, store, and rotate food (FIFO)

Team & Service Support

  • Work collaboratively with kitchen team to ensure smooth service
  • Communicate clearly with team members and leadership
  • Assist other stations as needed during service

Food Safety & Standards

  • Follow all food safety, sanitation, and cleanliness standards
  • Maintain a clean and safe work environment
  • Support kitchen opening and closing procedures

Qualifications

  • 1–3 years of professional kitchen experience
  • Experience in a fast-paced restaurant or hotel kitchen
  • Strong understanding of basic cooking techniques and kitchen operations
  • Ability to work efficiently under pressure
  • Strong organizational and communication skills
  • Food Safety Certification (or willingness to obtain)
  • Ability to stand for extended periods and lift up to 50 lbs
  • Valid Canadian work authorization
