Job Overview

We are seeking an energetic and passionate Assistant Manager/Sommellier to elevate our Food & Beverage offerings. Job Duties

  • Adhering to budget for beverage sales, labor costs and profitability
  • Ensure all appropriate workplace regulations and legislation regarding health and safety, accommodation standards, and company policies and procedures are adhered to at all times
  • Ensure that safe work practices are being followed
  • Ensure the effectiveness of employees through strategic hiring, assignment of duties, discipline, and dismissal
  • Ensure that all employees comply with company policies, procedures, and ethical standards
  • Provide employee training, ensuring that all applicable compliance requirements are met
  • Provide leadership for employee relations through effective communications, coaching, training, and development
  • Ensure the highest standards of personal hygiene and dress is enforced amongst all employees
  • Oversee inspections of property and services to ensure compliance with licensing laws, health and safety, and other statutory requirements
  • · Maintain POS systems and ensure all team members are following procedures for handling of financial transactions and credit controls and security (access)
  • · Manage restaurant’s good image and suggest ways to improve it
  • The mandate of the Sommelier is to plan and direct the Hotel's beverage operations ensuring the balance between delivering excellent guest service, maximizing profitability and supporting the development of all colleagues to their highest potential.
  • Work closely with Dining/Banquet Manager to deliver exceptional quality products and service to guests.
  • Communicate with all departments to ensure execution of all beverage operations
  • · Maximize guest satisfaction and hotel profitability by ensuring that Beverage services, and event operations are functioning in the most optimal manner possible.
  • · Perform manager on Duty tasks for the property when required.
  • · Improve and maintain service-related internal administration systems to further benefit the department.
  • Empower departmental and line supervisors by providing guidance and tools for payroll, inventory, and cost control.
  • Coach, support, and direct food and beverage line supervisors to optimize the efficiency of our operations.
  • Collaborate with the Marketing Team to create opportunities and promotions to increase business levels
  • Conduct meetings with staff to implement new products and procedures, and discuss areas of opportunities, special events, etc.
  • Respond and seek resolutions to all guest concerns: live, by phone and email.
  • Work with Shipping and Receiving to manage inventory and the flow of goods.
  • Conduct regular inventories, manage controls and ensure achievement of beverage cost margins
  • Implement and ensure adherence to hotel policies, practices, and procedures.
  • Oversee training procedures, ensuring compliance with hotel policies and specific needs of culinary and food and beverage operations.
  • Ensure accurate accounting of daily transactions and timely posting of data to POS software.
  • Anticipate business levels in all outlets and ensure peak-time support availability.
  • Enforce controls on beverage costs, working closely with the teams on food and beverage costs.
  • · Oversee FOH staff during daily operations of all Beverage outlets and ensure guest satisfaction.
  • · Assist in identifying ways of increasing Beverage revenue.
  • · Maintain service standards set by the Director of Operations
  • · Maintain daily cash balance of F&B floats, and Drop Safe
  • · Create weekly FOH staff schedules in coordination with department supervisors and Dining/Banquet Manager
  • · Oversee cleaning schedules and checklists within the department.
  • · Assist in inventory management, including ordering and weekly inventory counts.
  • · Implement and continuously conduct staff training to improve service levels within the department.
  • · Effectively lead beverage staff by upholding company values and providing mentorship as needed.
  • · Recruit and train new employees in tandem with Human Resources, following company policies on recruitment.
  • · Ensure employee certifications are up to date and filed; seek additional training opportunities for employees; work with Human Resources to develop the food and beverage team.
  • · Work in tandem with Marketing to attract patrons and track changing demands.
  • · Communicate and work with all departments to ensure that every guest receives excellent service.
  • · Review guest feedback platforms and provide appropriate feedback and suggestions to Staff and Management.
  • · Maintain and update items/menus in POS system.
  • · Comply with all Archive standards, policies, and procedures at all times.
  • · Work closely with other departments to grow revenue while fostering a productive and positive work environment for all.
  • · Other tasks and responsibilities as assigned by management.

Job Requirements

  • Certified Sommelier
  • 3 Years experience as a Sommelier
  • Sound analytical thinking, planning, prioritization, and execution skills
  • Effective leadership skills, with a strong focus on mentoring and motivation of employees
  • Demonstrated time management skills
  • Creativity
  • Ability to remain calm and poised in urgent situations
  • Excellent interpersonal and communication skills
