POSITION TYPE: Part-time or Full Time

POSITION LOCATION: Edmonton, West Edmonton Mall

ABOUT BREWCO

Brewco is where comfort meets craft in a way that simply feels right. We’re a food-first, beer-proud kitchen built around bold flavours, familiar favourites, and an atmosphere that’s warm, lively, and easy to settle into. From fried chicken and scratch-made pizzas to thoughtful brews poured with intention, everything here is designed to click together the moment you walk in. We believe great food should feel comforting, great beer should feel natural, and the whole experience should feel like exactly where you want to be. That’s Brewco... the place that feels right, from the first hello.

POSITION OVERVIEW

You're a key voice in how our beer shows up on the menu, in the glass, and in the guest experience. This is a hands-on role grounded in craft, consistency, and curiosity.

Reporting to the General Manager, as Brewmaster, you help bring our brewing program to life in a way that complements a food-first concept. You understand that great beer doesn’t compete with the kitchen, but rather it elevates it. You move comfortably between production, quality, and collaboration, ensuring every batch reflects our standards and every pour feels intentional.

SKILLS & QUALIFICATIONS

  • 2–4+ years of hands-on brewing experience in a commercial brewery
  • Strong understanding of brewing science: fermentation, yeast management, water chemistry, and process control
  • Experience across brewhouse and cellar operations (wort production, dry hopping, conditioning, etc.)
  • Familiarity with quality assurance practices, sensory analysis, and record keeping
  • Comfort working with brewing software, logs, and production tracking systems
  • Highly organized with a strong sense of ownership over product and process
  • Ability to manage multiple batches, timelines, and priorities without compromising quality
  • Strong mechanical aptitude and comfort troubleshooting equipment when needed
  • Understanding of inventory management, yields, and cost awareness in production
  • A team player who communicates clearly and works cross-functionally with kitchen and front-of-house teams
  • Curious, continuously learning, and open to refining techniques and exploring new ideas
  • Calm, steady presence in a fast-paced environment
  • Takes pride in the details, from tank to tap
  • Ability to lift 50lbs+ (grain bags, kegs) and work on your feet for extended periods
  • Comfortable working in a production environment with heat, cold, and cleaning chemicals

DUTIES & RESPONSIBILITIES

  • Support the Brewmaster in all aspects of daily brewing operations, from mash-in, lautering, boiling, fermentation, conditioning, and packaging
  • Independently execute brew days and cellar work with a high degree of accuracy, consistency, and efficiency
  • Own day-to-day cellar management: gravity checks, dry hopping, transfers, carbonation, and tank scheduling
  • Monitor and maintain yeast health, including harvesting, pitching rates, and viability tracking
  • Uphold and actively contribute to quality assurance systems, including sensory panels, batch tracking, and documentation
  • Maintain detailed and accurate brew logs, production records, and compliance documentation
  • Lead recipe development, pilot batches, and seasonal rotations with a lens on balance, drinkability, and food pairing
  • Work closely with the culinary team to develop beer styles that complement menu changes, features, and seasonal programming
  • Partner with front-of-house leadership to ensure beer knowledge is translated into confident guest recommendations
  • Lead and own beer education initiatives for staff, including tastings, training sessions, and product storytelling
  • Manage raw materials and inventory: ordering, receiving, rotating stock, and minimizing waste
  • Track yields, losses, and efficiencies, contributing to continuous improvement in cost control and production planning
  • Ensure all equipment is cleaned, sanitized, and maintained to the highest standards; flag and troubleshoot maintenance issues early
  • Coordinate and execute packaging runs (kegging, canning, or bottling), ensuring product stability and presentation quality
  • Maintain a clean, organized, and audit-ready brewhouse and cellar environment at all times
  • Uphold all health, safety, and regulatory standards (local, provincial, and federal), including proper chemical handling and documentation
  • Own planning and execution of new system implementations, process improvements, and scaling initiatives as the program grows
  • Own vendor relationships and sourcing decisions, including hops, malt, and specialty ingredients
  • Participate in collaboration brews, events, and community-facing activations that build brand presence
  • Lead by example while on shift when needed guiding junior team members and reinforcing standards in real time
  • Maintain and oversee draft system performance, including line cleaning, gas management, and pour quality to ensure consistent guest experience.”
  • Collaborate with leadership to forecast production based on sales velocity, events, and seasonal demand, ensuring optimal tank utilization and minimal stockouts or overproduction.
  • Own training and onboarding of new team members as needed
  • Polished, confident, and approachable
  • Show up prepared, present, and ready to elevate the room and the guest experience

AVAILABILITY REQUIREMENTS

  • Availability to work days, evenings, weekends, and /or holidays
  • Must be available to work early mornings - preferably 6:00am start times
