Experienced sushi professionals from Toronto, the GTA, Barrie and surrounding areas are encouraged to apply.

Parry Sound is seeking an experienced Sushi Chef / Menu Development Consultant to assist with the development and launch of a new sushi program.

This is a project-based position focused specifically on sushi menu development, implementation, and team training. We are looking for someone with strong practical sushi experience who can help create a polished, profitable, and operationally realistic opening menu.

Responsibilities

The successful candidate will work directly with ownership to assist with:

  • Developing recommendations for the opening sushi menu
  • Creating standardized recipes and product specifications
  • Establishing portion sizes, yields, and presentation standards
  • Preparing ingredient, production, and prep lists
  • Creating rolling, cutting, plating, and build instructions
  • Demonstrating sushi preparation and presentation techniques
  • Providing photographs or visual examples of finished menu items
  • Recommending sushi-specific ingredients, tools, and equipment
  • Assisting with sourcing appropriate products and vendors
  • Advising on sushi rice preparation, storage, workflow, and service
  • Providing sushi-specific food-handling guidance
  • Training and demonstrating techniques to the existing restaurant team
  • Helping ensure the menu can be executed consistently and profitably

Qualifications

The ideal candidate will have:

  • Professional sushi preparation experience
  • Strong knowledge of sushi rice, maki, nigiri, sashimi, rolling, cutting, and presentation
  • Experience developing restaurant menus, recipes, or kitchen specifications
  • An understanding of food cost, portion control, yields, waste reduction, and profitability
  • Strong visual presentation standards
  • The ability to teach and demonstrate sushi techniques clearly
  • Reliable communication and a professional, collaborative approach
  • The ability to perform on-site work in Parry Sound, Ontario

Experience launching a sushi program, training restaurant teams, consulting, or assisting with a new restaurant concept would be considered a strong asset.

Role Scope

This role is specifically focused on the development and implementation of the sushi program.

It does not include:

  • General restaurant management
  • Control of staffing or scheduling
  • Front-of-house management
  • Ownership or partnership
  • Control of the restaurant’s operating systems
  • General kitchen-management responsibilities outside the sushi program

Compensation

$25–$35 per hour, depending on experience.
