Job Overview

We are seeking a talented and experienced South Indian Chef specializing in authentic dosa preparation to join our culinary team. The ideal candidate will have a deep passion for South Indian cuisine, expert skills in batter fermentation and high-volume dosa cooking, and strong leadership abilities to oversee daily kitchen operations. This role offers an exciting opportunity to showcase your culinary craftsmanship, manage food preparation, and ensure high quality and consistency in a vibrant restaurant environment.

Duties

  • Prepare, ferment, and cook traditional South Indian dishes with a primary focus on authentic dosas, idlis, vadas, and chutneys.
  • Master the full dosa preparation process, including batter preparation, temperature control, spreading technique, and filling management during high-volume service.
  • Supervise kitchen staff, including line cooks and assistants, to maintain smooth workflow and consistent dish presentation.
  • Oversee food prep, ensuring strict adherence to recipes, portion control, and quality standards.
  • Manage food handling procedures in full compliance with safety, sanitation, and hygiene regulations.
  • Monitor ingredient inventory (e.g., lentils, rice, spices) and coordinate with suppliers for timely procurement.
  • Maintain a clean and organized kitchen area according to health and safety standards.
  • Lead the kitchen team during busy service hours to ensure rapid ticket times and guest satisfaction.
  • Train new staff on traditional South Indian cooking techniques, food safety, and restaurant policies.

Skills

  • Proven experience in South Indian cuisine, with specialized expertise in dosa making (batter preparation, fermentation, and fast-paced griddle operation).
  • Hands-on supervisory or kitchen management experience in a high-volume restaurant or hospitality setting.
