Full job description

The Hotel Grand Pacific’s Kitchen team is growing! We’re looking to add a First Cook to our close-knit team. As an independent 4-star property in the heart of Victoria, we offer a professional and supportive environment with a strong focus on internal growth, mentorship, and development.

In this role, you will prepare high-quality dishes for Fathom Restaurant and act as a working leader on the line, supporting the leadership team in maintaining excellence in execution, consistency, and presentation. You will work closely with the Sous Chef, and Chef, with ongoing mentorship and guidance from a Chef with international Michelin-star experience, focused on skill development consistency, and professional growth.

You will also be expected to actively support the development of Junior cooks and kitchen staff, reinforcing standards, and contributing to a positive, structured and learning-focused kitchen culture.

Duties:

  • Work under the direction of kitchen leadership to plan, organize, prepare, cook, and present menu items for service.
  • Prepare, cook, and present dishes for Fathom Restaurant while maintaining stablished standards of quality and consistency.
  • Lead and support a designated section of the kitchen, with the ability to run a section independently during service.
  • Support, train, and mentor junior cooks and kitchen staff during service, reinforcing standards and consistency
  • Demonstrate techniques and support onboarding of new team members as required
  • Maintain strong awareness of current culinary trends and techniques
  • Ensure the highest standards of cleanliness, organization, and food safety are consistently met
  • Perform other duties as assigned by Kitchen Management.

What We’re Looking For:

  • Red Seal Certification is an asset but not required.
  • Valid Food Safe certification (or willingness to obtain)
  • Minimum 2 years of well-rounded culinary experience in a professional kitchen
  • Fine dining experience is an asset, but not essential
  • Strong sense of urgency, accountability, and professionalism.
  • Strong communication and teamwork skills, with a willingness to learn and develop
  • Demonstrated interest in long-term growth within a structured, high - standards kitchen environment
  • Previous supervisory or leadership experience is an asset
  • Full-time availability required, including holidays and weekends
