Full job description
The Food Laboratory Technician is responsible for conducting laboratory testing, monitoring product quality, and supporting food safety and regulatory compliance in a federally registered meat processing facility. This role performs chemical, physical, microbiological, and packaging-related analyses while ensuring compliance with CFIA, SFCR, HACCP, and customer specifications. The technician works closely with Production, QA, and Sanitation teams to ensure products consistently meet quality and food safety standards. The ideal candidate will be flexible, able to multitask in a fast-paced environment, and support other duties when needed.
Laboratory Testing & Analysis
- Perform routine laboratory testing on raw materials, in-process products, and finished products.
- Conduct testing for moisture, protein, fat, salt/sodium, pH, and water activity (Aw), color and texture.
- Prepare, label, and handle product samples for internal testing and submission to external accredited laboratories.
- Record and verify laboratory test results accurately and maintain complete documentation.
- Investigate and report out-of-specification results to the QA Manager.
Food Safety & Microbiological Monitoring
- Assist with maintaining microbial environmental swab trending records and ensure results are updated and reviewed.
- Coordinate sample submissions and maintain chain-of-custody documentation.
- Assist in performing and document allergen swabbing, and other rapid food safety tests as required.
ATP & Sanitation Verification
- Download ATP swabbing data from the ATP monitoring system on a scheduled basis.
- Review ATP results for completeness, identify abnormal trends, and report concerns to QA.
Laboratory Inventory & Equipment
- Operate, calibrate, and maintain laboratory equipment, including pH meters, water activity meters, thermometers, scales, and FOSS analyzers.
- Perform routine calibration checks and maintain calibration records.
- Maintain inventory of microbiological swabs, ATP swabs, allergen test kits, laboratory chemicals, reagents, and consumables.
- Notify the QA Manager when supplies require replenishment.
Quality Monitoring & Product Evaluation
- Verify product quality attributes including weight, appearance, colour, texture, packaging integrity, and temperature.
- Assist with retained sample inventory, including labeling, storage, organization, and disposal according to retention schedules.
- Assist with organoleptic and sensory evaluations of products, including appearance, aroma, flavour, and texture assessments.
- Maintain sensory evaluation records and documentation.
Shelf-Life Studies & Validation
- Assist with shelf-life studies, including sample collection, storage, scheduled evaluations, and record keeping.
- Document sensory, microbiological, and physical observations throughout shelf-life studies.
- Support product validation and quality improvement projects as assigned.
Audit & Continuous Improvement Support
- Assist during CFIA, customer, and third-party audits by providing laboratory records and supporting documentation.
- Participate in root cause investigations related to product quality, sanitation, or food safety issues.
- Support process validations, product trials, and continuous improvement initiatives.
Skills and Qualifications:
- Diploma or Degree in Food Science, Food Technology, Microbiology, Biotechnology, Chemistry, or a related field.
- 1–3 years of laboratory or QA experience in a food manufacturing environment (meat processing experience is an asset).
- Knowledge of HACCP, GMPs, CFIA/SFCR requirements, and laboratory testing procedures.
- Strong attention to detail, organization, and record-keeping skills.
- Proficient in Microsoft Excel and Word.
- Exceptional attention to detail, accuracy, communication, and organizational skills.
- Flexibility and willingness to take on additional tasks and support cross-functional teams.
Hours of Work:
Monday - Saturday 7am to 4:30pm.
"This position regularly requires approximately 54 hours per week. Hours in excess of standard ESA limits will be worked pursuant to a written agreement where required by Ontario employment legislation. Overtime will be paid in accordance with the Employment Standards Act."
Pay: $20.00-$21.00 per hour
Expected hours: 54.0 per week
