CENTINI Restaurant

Senior Sauté · Fresh Pasta · Garde Manger

This is a different kind of kitchen.

Centini Restaurant is an independent, chef-run Italian restaurant in downtown Calgary, established in 2002.

We are hiring for three key brigade roles:

Senior Sauté

Fresh Pasta

Garde Manger

This is not an entry-level kitchen.

We are busy, we work at a serious pace, and we expect people to arrive with real kitchen experience, sound judgment, strong mise en place habits, and the ability to hold a station properly through service.

What makes this kitchen different

We cook with exceptional ingredients and expect the people handling them to know what they are doing.

We are a small team, which means every station matters. Your work is visible. Your standards matter. Your contribution affects the restaurant every night.

There is no corporate kitchen structure here, no layers of hospitality-group bureaucracy, and no interest in turning cooks into interchangeable parts of a system.

We are looking for experienced people who still care about the work itself.

Senior Sauté

This is a senior line position in a busy service kitchen.

You should already be comfortable running a demanding sauté station, managing multiple pickups, maintaining control under pressure, communicating clearly with the rest of the line, and producing consistent food at pace.

This is not a position for someone learning sauté for the first time.

Fresh Pasta

We are looking for someone with real fresh-pasta experience who understands both quality and production.

You should be comfortable making fresh pasta consistently and efficiently at restaurant scale - not simply producing a few portions at a time.

Experience with dough, sheeting, cutting, filled pasta and production planning is an asset.

Garde Manger

We are looking for someone organized, disciplined and detail-oriented who understands the importance of strong mise en place and consistency.

You should be able to work cleanly, move with purpose and maintain standards through a busy service.
