Position: Ethnic Food Cook

NOC: 63200

Wages: $36.50-$38.50 per hour for 30-40 hours per week

Terms of employment: Full time, Temporary

Job duties

● Prepare and cook authentic North Indian complete meals and individual dishes, utilizing traditional spice-blending techniques for signature items such as Butter Chicken, Goat Curry, Biryani, and street-style chaats.

● Adapt traditional Indian recipes to accommodate specific customer dietary requirements, including preparing vegan and gluten-free variations of curries like Chana Masala and Aloo Gobhi.

● Schedule and supervise kitchen helpers during high-volume periods, training them on specific ethnic food preparation techniques such as proper dough resting for bhaturas and naans, and marination processes for tandoori meats.

● Oversee specialized ethnic kitchen operations, managing the workflow between high-heat Tandoor ovens, curry simmering vats, and the street-food prep counters.

● Maintain inventory and records of specialized imported Indian ingredients, including raw spices, specific lentil varieties, and basmati rice, while monitoring the condition of specialized equipment like tandoor skewers.

● Set up, assemble, and oversee the quality control of complex multi-item platters and combinations, such as the restaurant's Vegetarian and Non-Vegetarian Thalis.

● Clean and sanitize the kitchen and work areas, enforcing strict health standards for the safe handling of raw marinated meats and fresh dairy products like paneer and yogurt.

● Assist in planning menus, determine accurate portion sizes for dine-in Thalis versus takeout containers, estimate food requirements and costs for slow-cooked meats, and monitor and order daily supplies.

Education: Completion of Secondary School is an asset.

Work Experience: 1-2 years experience of commercial cooking required.
