Dishroom Supervisor – High-Volume Food Production Facility

Summerhill Market is looking for an experienced Dishroom Supervisor to oversee the dishwashing and sanitation operation at our high-volume food production facility.

This is not a traditional restaurant dishwasher position. Our production facility operates at a significant volume and supports multiple departments producing prepared foods for our retail locations. The dishroom is a critical part of the operation and requires strong organization, speed, leadership, and attention to sanitation standards.

The successful candidate will have previous experience working in a high-volume food production, commissary, catering, institutional kitchen, hotel, manufacturing, or similar environment and will be comfortable supervising a team of approximately eight dishroom employees.

Key Responsibilities

  • Lead and organize the daily dishroom operation to ensure dishes, pots, pans, trays, utensils, racks, and production equipment are cleaned quickly and efficiently.
  • Supervise, direct, and support a team of dishroom employees throughout the shift.
  • Maintain a strong sense of urgency and ensure the team keeps pace with production demands.
  • Assign employees to different stations and adjust staffing throughout the shift based on workload.
  • Ensure dirty equipment does not accumulate or create delays for production departments.
  • Operate and oversee commercial high-volume dishwashing equipment.
  • Ensure proper use of cleaning and sanitizing chemicals, including correct concentrations and procedures.
  • Maintain excellent cleanliness and sanitation throughout the dishroom and surrounding work areas.
  • Train employees on proper dishwashing, sanitation, organization, chemical handling, and safe work procedures.
  • Monitor employee performance and address concerns related to productivity, organization, attendance, or work standards.
  • Ensure clean equipment is returned promptly to the appropriate production departments.
  • Maintain proper organization of racks, carts, containers, utensils, and production equipment.
  • Work closely with production supervisors and kitchen teams to prioritize equipment needed for ongoing production.
  • Identify bottlenecks and continuously look for ways to improve dishroom workflow and efficiency.
  • Ensure all food safety, sanitation, health and safety, and company procedures are followed.
  • Lead by example and be willing to work alongside the team.

What We Are Looking For

  • Previous supervisory or lead experience in a high-volume dishroom, commissary, food production facility, institutional kitchen, hotel, catering operation, or similar environment.
  • Strong understanding of commercial dishwashing operations and sanitation procedures.
  • Experience operating industrial or high-volume dishwashing equipment.
  • Ability to manage a team and maintain productivity in a fast-paced environment.
  • Strong organizational and time-management skills.
  • Ability to prioritize work and respond quickly to changing production needs.
  • Strong work ethic and willingness to take ownership of the department.
  • Comfortable giving direction, training employees, and holding team members accountable.
  • Knowledge of proper chemical handling, sanitation, and workplace safety.
  • Ability to perform physically demanding work, including standing for extended periods and lifting, carrying, pushing, and pulling dish racks and equipment.
  • Reliable attendance and punctuality are essential.

What Success Looks Like

The Dishroom Supervisor is responsible for ensuring the dishroom consistently stays ahead of production. Clean equipment should be available when departments need it, the work area should remain organized and sanitary, and the team should work with urgency, efficiency, and accountability.

We are looking for someone who takes pride in running a clean, efficient, well-organized operation and who is comfortable taking full ownership of the department.
