About ROUSSEAU Chocolatier
ROUSSEAU Chocolatier is a family owned artisan chocolate company based in Halifax, Nova Scotia. We combine traditional French chocolate making techniques with thoughtfully selected ingredients, including flavours inspired by Nova Scotia.
We are looking for a skilled and passionate Chocolatier to join our production team and help create the premium confections our customers have come to know and love.
Full-time Chocolatier Position Overview
The Chocolatier supports the production team in preparing, finishing, and presenting a wide range of chocolate products for our retail store, corporate clients, and wholesale partners.
This is a hands on role suited to someone who values craftsmanship, consistency, creativity, and an exceptionally high standard of quality. The successful candidate will work closely with the production team to ensure production is completed accurately, efficiently, and on schedule.
Reports to: Sous Chef Chocolatier or, if that position is not filled, the Head Chocolatier
Key Responsibilities:
Chocolate Production
- Prepare, assemble, decorate, and finish chocolate products according to established recipes and production standards
- Support the production of retail, corporate, wholesale, and custom orders
- Complete assigned production tasks accurately and within established timelines
- Help maintain minimum product stock levels and support timely order fulfillment
- Follow established production processes while identifying opportunities to improve efficiency and consistency
Quality and Presentation
- Follow recipes, tempering procedures, decorating techniques, and presentation guidelines
- Ensure the flavour, texture, finish, and visual appearance of each product meet ROUSSEAU Chocolatier’s standards
- Apply transfer sheets and chocolate decorations accurately and consistently
- Identify and communicate product quality concerns before products are packaged or released
- Handle products carefully to minimize breakage, waste, and unnecessary product loss
Kitchen Organization and Food Safety
- Maintain a clean, safe, and organized workspace throughout each shift
- Follow all food safety, sanitation, allergen, and workplace safety procedures
- Clean and properly store tools, equipment, ingredients, and production materials
- Support opening, closing, and general kitchen cleaning responsibilities as required
Inventory and Communication
- Monitor ingredient, packaging, and production supply levels
- Notify kitchen leadership when ingredients or supplies are running low
- Communicate clearly with kitchen leadership regarding production progress, delays, or quality concerns
- Collaborate with the production and front of house teams to understand upcoming orders and product requirements
- Participate in quarterly coaching and development sessions with kitchen leadership
What We Are Looking For
- A genuine passion for chocolate, pastry, food, and artisan craftsmanship
- Previous professional chocolate, pastry, baking, or culinary production experience is preferred
- Strong attention to detail in both production and presentation
- Ability to follow recipes, instructions, and established production processes consistently
- Strong organization and time management skills
- A proactive and solution focused approach to work
- Clear and respectful communication skills
- Ability to work collaboratively as part of a production team

Performance Expectations
Success in this position will be measured through the following areas:
Production Completion
All assigned tasks must be completed accurately and on time, according to established recipes, production processes, and quality standards.
Order Fulfillment
Retail, wholesale, corporate, and custom orders must be prepared in accordance with internal production deadlines.
Product Quality and Presentation
Transfer sheets, chocolate decorations, finishes, and overall product presentation must consistently meet ROUSSEAU Chocolatier’s standards.
Waste Control
Ingredients and finished products must be handled carefully and responsibly. Product waste should not exceed 10 chocolates or product units per week, except where otherwise approved due to training, testing, or circumstances outside the employee’s control.
Weekly Reporting
The required weekly performance indicators must be emailed to the Head Chocolatier and Operations Manager each Friday.

Pay: $19.00-$25.00 per hour
