Le Club de golf Royal Ottawa offre une opportunité excitante pour un cuisinier ou une cuisinière 2 de se joindre à l'équipe du Royal. Le cuisinier ou la cuisinière sera un membre clé de l'équipe de cuisine. Relevant du sous-chef et du chef exécutif, le cuisinier 2 sera responsable de la préparation et de l'exécution de tous les aspects de la production des repas du club. Le cuisinier 2 joue un rôle de premier plan dans la cuisine en veillant à la livraison rapide et précise de toutes les commandes de nourriture.

- Préparer quotidiennement tous les plats chauds, froids et à la carte ;
- Préparer tous les services dans les délais impartis, en veillant à ce que les normes du club soient respectées.
- Expliquer la composition et la préparation des plats au personnel de cuisine et de service ;
- Inspecter les livraisons pour en vérifier la qualité et le poids avant de les accepter ;
- Contribuer à la productivité et à l'efficacité opérationnelles en manipulant les aliments en toute sécurité et en appliquant les meilleures pratiques ;
- Nettoyer et entretenir sa section, y compris l'ensemble des équipements et des ustensiles ;
- Gérer l'information afin de maintenir et d'améliorer la qualité des aliments, la satisfaction du service, le travail d'équipe et l'efficacité opérationnelle ;
- Identifier les domaines d'amélioration pour le chef et le sous-chef.
- Effectuer d'autres tâches connexes selon les besoins.
Qualifications :
- Diplôme d'apprentissage ou diplôme culinaire, le Sceau rouge est un atout ;
- 2 à 3 ans d'expérience dans un hôtel ou un restaurant à service complet avec un service rapide ;
- Capacité à cuisiner, à préparer des sauces, des pâtes et des soupes pour des petits et grands groupes ;
- Capacité à préparer une grande variété de viandes ainsi que de grands rôtis ;
- Connaissance de la préparation et de la présentation du poisson et des sauces qui l'accompagnent ;
- Connaissance de la préparation et de la présentation des légumes ;
- Bonne connaissance des méthodes et procédures de cuisson, ainsi que de l'utilisation des équipements de cuisine ;
- Bonne connaissance de la finition des produits du menu à partir de l'état brut ou de base ;
- Solide connaissance des procédures de santé et de sécurité
Cook 2 - Available for Regular Full-Time
Position Summary:
The Royal Ottawa Golf Club has an exciting opportunity for a Cook 2 to join the Royal team. The Cook will act as a key member of the Kitchen team. Reporting to the SousChef and Executive Chef, the Cook 2 will be responsible for preparing and delivering on all aspects of the Clubs meal production. The Cook 2 plays a leading role in the Kitchen as they ensure quick and accurate delivery of all food orders.
The position requires an immense work ethic, professionalism, and is ideal an established Cook looking to further their career in the industry. This is an excellent opportunity for those looking for a fast-paced work environment. Good communication and organizational skills are also required.
Job Responsibilities:
- Consistently deliver superior quality and appealing presentation of all food deliverables;
- Prepare all hot, cold, and a la carte items on a daily basis;
- Complete all service preparation in a timely manner, ensuring Club standards are met
- Explain composition and preparation of dishes to kitchen and wait staff;
- Inspect deliveries for quality and weight prior to acceptance;
- Contribute to operational productivity and efficiencies through safe food handling and best practices;
- Cleans and maintains their section including all equipment and utensils;
- Manage information in order to maintain and improve food quality, service satisfaction, teamwork and operational effectiveness;
- Identify areas of improvement to Chef and SousChef
- Performs other related duties as required.
Qualifications:
· Completion of an apprenticeship program or culinary diploma, Red Seal an asset;
- 2-3 years’ experience in a full-service hotel or restaurant with fast paced service;
- Ability to cook, prepare sauces, pasta and soups for small and large groups;
- Ability to prepare a large variety of meats as well as large roasts;
- Knowledge of the preparation and presentation of fish and accompanying sauces;
- Knowledge of the preparation and presentation of vegetables;
- Sound knowledge of cooking methods and procedures, as well as usage of kitchen equipment;
- Sound knowledge of finishing menu items from raw or basic state;
- Solid understanding of Health and Safety procedures
