About Madras Mami:
Madras Mami is a new pure vegetarian restaurant in Mayfield Plaza, Brampton celebrating the true essence of South India. Our mission is to bring authentic flavours straight from Tamil Nadu, Kerala, Andhra Pradesh, Karnataka, and Telangana — served with warmth, tradition, and the unmistakable taste of home.

Position Summary:

We’re looking for an experienced and passionate South Indian Chef who can craft authentic vegetarian dishes with traditional techniques and original flavours. The ideal candidate will have hands-on experience preparing a wide range of South Indian items — from crispy dosas and fluffy idlis to flavourful sambar, chutneys, and regional specialties.

Responsibilities

  • Prepare and cook authentic South Indian dishes including dosa, idli, vada, uttapam, sambar, rasam, and chutneys.
  • Develop and maintain consistent taste, texture, and presentation in all dishes.
  • Manage kitchen operations, including food preparation, cooking, and plating.
  • Ensure proper use of spices and ingredients to maintain traditional South Indian flavors.
  • Maintain cleanliness, hygiene, and food safety standards.
  • Plan and manage kitchen inventory, food stock, and procurement.
  • Train and supervise kitchen assistant chefs.
  • Innovate and introduce new dishes or regional variations while maintaining authenticity.
  • Collaborate with management to plan menus and special events.

Requirements

  • Proven experience as a South Indian Chef, or Specialty Cook in a restaurant or hotel.
  • In-depth knowledge of South Indian cuisine, ingredients, and cooking techniques (especially dosa batter fermentation, sambar preparation, etc.).
  • Ability to handle dosa tawa operations and multitask during busy service hours.
  • Strong sense of taste, aroma, and presentation.
  • Good time management, organization, and teamwork skills.
  • Basic understanding of kitchen hygiene, food safety, and inventory control.
