The Restaurant Manager, Two Brothers is responsible for leading the daily operations of our flagship restaurant with a strong focus on guest experience, team leadership, operational excellence, financial performance, and service standards. This individual works closely with Culinary, Events, Beverage, and Senior Leadership to deliver exceptional hospitality while achieving departmental goals.

The ideal candidate is an experienced hospitality leader who thrives in high-volume restaurant operations and is passionate about creating memorable dining experiences.

Restaurant Operations

  • Lead and oversee all daily front-of-house operations for breakfast, lunch, dinner, and patio service
  • Ensure seamless execution of service while maintaining premium hospitality standards
  • Conduct daily pre-shift meetings communicating reservations, VIPs, sales initiatives, and service expectations
  • Coordinate with Culinary to ensure timely food execution and menu knowledge
  • Monitor guest satisfaction and resolve service concerns professionally
  • Maintain cleanliness, organization, and presentation standards throughout the restaurant
  • Oversee opening, closing, cash handling, POS accuracy, and operational procedure
  • Ensure all opening, shift change, and closing procedures are consistently executed
  • Ensure service standards are implemented and held to accountability
  • Ensure inventory is accurately recorded and monitored
  • Ensure all reservations are created in a timely manner from sales, concierge, email requests
  • Drive innovation by introducing new programming, themed events, and guest-focused initiatives that strengthen the identity of the Two Brothers – year round

Administrative Responsibilities

  • Prepare weekly schedules and manage colleague requests off
  • Complete payroll and tip reporting accurately
  • Conduct inventory reconciliations and ensure accuracy
  • Maintain operational reports, weekly labour report and labour commentary
  • Complete ordering for department and invoice reconciliation
  • Create and maintain department training program and documentation
  • Create and maintain SOP documentation
  • Create and monitor a guest feedback tool to watch for patterns
  • Forecast weekly, daily to ensure labour aligns with forecast/budgeted numbers

Leadership & Team Development

  • Recruit, train, mentor, and supervise servers, bartenders, hosts, and support staff
  • Foster a positive, professional, accountable, and team-oriented culture
  • Provide coaching, performance feedback, and ongoing development opportunities
  • Ensure all staff uphold hospitality, grooming, and professional conduct standards
  • Prepare schedules aligned with forecasted covers and labour targets
  • Promote product knowledge and sales techniques within the team to maximize guest experience and revenue
  • Ensure colleagues are following the Osprey Dining standards
  • Conduct daily pre-shift meetings highlighting:
  • Sales goals
  • Product features
  • Guest service expectations
  • Course activity
  • Safety updates
  • Give leadership support to other departments on the resort when needed

Guest Experience

  • Deliver exceptional hospitality focused on professionalism, warmth, and attention to details, consistently
  • Build strong relationships with members, guests, and resort visitors
  • Act as a visible floor leader during service periods
  • Handle guest feedback and service recovery promptly and professionally
  • Maintain consistent service standards reflective of a premier golf resort
  • Liaison between sales and guest experience

Financial & Administrative Responsibilities

  • Manage labour productivity and scheduling efficiency
  • Assist in achieving departmental sales, labour, beverage cost, and food cost targets
  • Review daily sales reports and identify revenue opportunities
  • Manage inventories, ordering, receiving, and product control
  • Complete payroll approvals, inventory reconciliations, and operational reporting
  • Ensure compliance with health & safety, Smart Serve, and company policies
  • Assist with menu engineering and creation
  • Assist with future events, promotions, groups to drive sales year round
  • Drive innovation by introducing new programming, themed events, and guest-focused initiatives that strengthen the identity of the Two Brothers – year round

Inventory & Purchasing

Maintain accurate inventory levels for:

  • Alcohol
  • Non-alcoholic beverages
  • Food
  • Snacks
  • Retail items
  • Dry goods
  • Complete inventory counts and ensure accuracy
  • Order products based on business forecasts
  • Minimize and track waste and shrinkage
  • Ensure accurate product transfers between outlets
  • Maintain inventory organization and storage standards

Beverage Program

  • Oversee execution of wine, beer, cocktail, and non-alcoholic beverage programs
  • Ensure all bartenders execute recipes and specifications consistently
  • Support beverage menu launches and seasonal features
  • Conduct regular product knowledge and wine education sessions
  • Maintain liquor controls and inventory accuracy

Qualifications & Experience

  • Minimum 3–5 years of restaurant management or senior hospitality leadership experience
  • Experience in a golf club, resort, luxury hotel, or upscale dining environment preferred
  • Strong leadership, communication, and organizational skills
  • Excellent knowledge of food, wine, beer, cocktails, and premium service standards
  • Ability to multitask and lead in a fast-paced environment
  • Smart Serve Certification required
  • Food Handler Certification considered an asset
  • Flexible availability including mornings, evenings, weekends, and holidays

Preferred Qualifications

  • Diploma or degree in Event Management, Hospitality Management or related field
  • Experience with weddings, corporate events, and golf tournament operations
  • Smart Serve Certification
  • Knowledge of luxury service standards and premium guest experiences
