Full job description

Reporting to the Quality Assurance Manager, the Lab & HACCP Coordinator plays an integral role in supporting Freshwater Fish Marketing Corporation's quality assurance and food safety initiatives. This position is responsible for overseeing the technical and compliance aspects of our food safety systems by maintaining, conducting ongoing reviews of, and continuously improving documented quality assurance and food safety programs, including the Quality Management Program (QMP) Prerequisite Programs, Hazard Analysis & Critical Control Point (HACCP) Plans, and Standard Operating Food Safety Procedures. The successful candidate will also perform microbial and chemical testing to help ensure FFMC's products meet internal, customer, and regulatory standards.

Major Duties & Responsibilities

The successful candidate will:

  • Perform general laboratory maintenance, including housekeeping, supplies inventory control, equipment monitoring, and calibration.
  • Conduct internal microbial testing of products, monitor adherence to specifications, implement corrective actions, and place holds on non-conforming product as required.
  • Research and recommend new testing methods and products to improve quality and conduct product sampling for third-party analysis verification.
  • Report monthly product microbial test results, analyze data, monitor trends, and participate in root cause analysis and corrective action implementation.
  • Perform daily pre-operational sanitation effectiveness checks, including visual inspections, ATP testing, and microbial swabs.
  • Maintain HACCP documentation, verify monitoring records, and update SOPs and forms resulting from HACCP reassessments and program changes.
  • Conduct food safety and quality audits to verify compliance with QMP Prerequisite Programs and HACCP requirements, including glass and brittle plastic inspections, internal audits, and food safety audits.
  • Identify Food Safety and HACCP-related work requests arising from Interior Premises Audits, sanitation monitoring, pre-operational inspections, third-party audits, or other food safety issues.
  • Maintain PCO records and conduct PCO audits.
  • Maintain product labels and ensure they meet regulatory requirements for all relevant jurisdictions.
  • Monitor employee compliance with GMP and food safety requirements and recommend disciplinary action where appropriate.
  • Maintain documentation filing systems.
  • Assist with various projects, testing, and other duties as assigned.
  • Act as the backup to the Quality Assurance Manager and Product Quality Supervisor.
  • Assist with on-floor specification inspections as required.

Qualifications

The successful candidate will possess:

  • A minimum four-year post-secondary education in a science-related field, or an equivalent combination of related education and experience.
  • Coursework in microbiology and chemistry.
  • HACCP/Food Safety training.
  • Confidence and effective decision-making skills.
  • Strong analytical, organizational, and administrative skills with excellent attention to detail.
  • The ability to work effectively with limited supervision.
  • Manual dexterity.
  • Proficiency in Microsoft Office applications, including Outlook, Word, Excel, Access, PowerPoint, and Internet applications.
  • Advanced proficiency in Microsoft Excel and Microsoft Access.
