We are looking for a dynamic Chef to lead the culinary activities of Heartstone at The Prairie Creek Inn, a casually elegant 40 seat restaurant in our luxury inn located 17 km south of Rocky Mountain House, Alberta. See www.theprairiecreekinn.com.
Heartstone’s menu offers a variety of casual gourmet dining choices utilizing fresh, regional, and seasonal ingredients, including fish, game, and bison. We also feature daily chef’s creations, internationally inspired dishes, made in house desserts, and fine wines and spirits. The restaurant serves guests of the inn and patrons from the area for dinner service only from Wed to Sun on a reservation basis, and also services corporate retreats, weddings and events.

We want an experienced and professional chef who is passionate about food and creating new culinary delights while enjoying a quiet, high quality rural lifestyle. The right candidate will enjoy increased status in the culinary field as Heartstone achieves its imminent reputation as the place to dine in Central Alberta, and a recognized culinary tourism destination.
Plan, prepare and cook casual fine dining meals with an ever changing menu of daily Chef’s choices using the finest fresh, local and seasonal ingredients available.
Plan, price and design menus that reflect the Inn’s theme and market including establishing creative presentation techniques and quality standards.
Perform all duties related to sourcing, ordering, receiving, stocking, invoicing and inventory control of food, ingredients and kitchen equipment.
Work independently to perform all food preparation, cooking and plating duties utilizing and managing casual kitchen help when required.
Become an active face of the restaurant by periodically conversing with guests and explaining menu choices, ingredients and cooking procedures.
Maintain a clean working environment and perform all levels of kitchen duties including washing dishes and cleaning the kitchen when required.
Ensure proper kitchen equipment operation/maintenance, safety and sanitation standards.
Be conscientious about maintaining food cost control and profit margins, limiting food waste and keeping records and reports against pre-established goals and budgets.
Meet with clients to discuss and plan menus for weddings and special group functions.
At least 3 years experience in a professional kitchen, preferably for a higher end restaurant.
Diploma in Culinary Arts & Professional Cooking, Food Services Technology/Management/or equivalent
Red Seal Certificate
An impressive repertoire of gourmet regional and international dishes, as well as a flair for creating new and innovative menus and food presentation techniques
Basic computer, forecasting, scheduling, budgeting and cost analysis skills
Knowledge of diet principles, portion control and safe and sanitary food handling procedures
Must have own transportation and a valid driver’s license.
Must have legal permission to work in Canada.
Mature, dependable, organized, professional and well groomed
Personable, open and friendly with a positive attitude
Able to work well under pressure with strong organizational and time management skills
Takes ownership of duties, shows initiative and is proactive and flexible
Knowledge of wine and other beverages as an ideal accompaniment to food is an asset
$50,000 to $60,000 per year depending on experience
This is a full-time, permanent position.
Temporary staff housing may be available.
