Pasta noodles fuel the fires in these factories. OSF International operates nearly 40 Old Spaghetti Factory restaurants in 15 states. The casual-dining spots offer a variety of Italian-style dishes, including lasagna, ravioli, tortellini, and, of course, spaghetti served with several kinds of sauces. Low-carb pasta was added following a wave of high-protein diets that grabbed national attention. Other menu items include sandwiches and a selection of daily lunch specials. Greek immigrant Guss Dussin opened the first Old Spaghetti Factory in Portland, Oregon, in 1969.
