Exciting launch of a new upscale casual restaurant in the heart of Waterloo’s historic ‘Barrel Yards’. This full service restaurant and bar will provide a premium upscale experience in a hip and casual atmosphere. The team will be energetic and fun providing unpretentious and guest- focused service. Our goal is to be a First Choice dining destination for Waterloo residents and visitors to the area.
Job Requirements:

  • Culinary Degree from a recognized Institute of Culinary Arts or equivalent combination of education and experience. Red Seal Certification preferred.
  • Minimum 4-5 years progressive culinary/kitchen management experience
  • Extensive menu development and costing experience
  • Proven understanding and success managing food and labour costs
  • Comprehensive knowledge of food and service trends with a focus on quality, production, sanitation, food cost controls and presentation
  • Demonstrated wine and Beverage knowledge, wine and food pairing experience
  • Working knowledge of modern and proper techniques for all line stations, working knowledge of how to properly and professionally expedite a restaurant during a busy service
  • Knowledge of federal, provincial and municipal health and safety requirements
  • Exceptional communication, organization and leadership skills
  • Proven ability to ensure and train consistency, quality and plate presentation
  • Experience in training, orientating and development of new employees including sous chefs
  • Hands on attitude
  • Ability to work a flexible schedule, including weekends and holidays
  • Ability to lift over 20lbs

Successful Candidate:

  • Assist in hiring of all new kitchen employees
  • Assist in set up and organization of kitchen
  • Assist in ordering of all food products for the successful execution of the restaurant and hotel banqueting
  • Supports Banquets in ordering, mise en place and execution during meal periods
  • Work alongside Executive Chef and restaurant General Manager
  • Plans and prices menus, establishes portion sizes and standards of service
  • Manage kitchen compliance of health and safety regulations
  • Purchasing and inventory control
  • Report cost of goods and labour control to budget
  • Co-ordination of catering activities for events
  • Demonstrate leadership and development for all personnel
  • Schedules kitchen personnel in conjunction with business forecasts and predetermined budget
  • Provides progressive training, evaluations, rewards and discipline for all kitchen personnel
  • Performs other duties as assigned
