Position: Head Chef
The Nanaimo Golf Club is looking for a talented, creative, hardworking individual who can take ownership of its Kitchen operations and work as a Head Chef. We are looking for a service minded individual who can provide a great club dining experience to our diverse set of members and guests. With a brand-new 23,000 Sq Ft Clubhouse and a premier 18 hole championship golf course we cater to our club members and also welcome the general public to use our services.
The Head Chef will be the head of Kitchen team, who should be able to lead a team of 15+ employees. This position reports to the F&B Manager; working to ensure kitchen is meeting the high expectations.
The Head Chef:
o Must be positive, highly motivated, hands-on working member of the team
o Responsible for selecting and developing recipes and standardizing production menus to ensure consistent quality.
o Plan, organize and coordinate menus for day to day operations and banquet functions
o Ensure consistency of quality, portion control and plated presentation
o Select food suppliers to ensure best quality, service and price. Effective inventory controls
o Strives to provide quality service and/or product in an efficient and cost effective manner.
o Maintains labour costs. Monitors and adjusts staffing levels during each shift according to business demands.
o Team management via on-going training, coaching and educating.
o Ensures staff and management are well informed. Develop and maintain an on-going proactive relationship with staff and Members
o Manage the kitchen in compliance with all health and safety regulations by ensuring adherence to sanitary and safe food handling guidelines
o Manages employees in accordance with the principle of progressive discipline and the Collective Agreement.
Specific Duties and Responsibilities: -
o Sources product and pricing for current and future menus.
o Purchasing of all food items, some beverage and cleaning supplies.
o Receives deliveries, ensuring quality and proper rotation.
o Monthly inventory of all food items.
o Ensures food costs are in line with expectation.
o Creates menus, theme events and designs menus for special functions with costing
o Increases presentation and quality of food.
o Ensures hygiene standards are followed at all times.
Minimum Requirements: -
o Culinary degree or equivalent working knowledge
o Three+ years experience as an Head/ Executive Chef
o Experienced with high traffic ala carte service and volume banquet service
o Demonstrated knowledge and experience at developing concepts, menu creation, professional and convincing plate presentations
o Excellent supervisory skills complemented by proven experience controlling food and labour costs, inventory management, recipe costing and menu development
o Ability to manage Unionized workforce and work within a Unionized environment
o Prior Golf Club Experience an asset
o Strong process management and administrative skills
o Strong interpersonal, verbal and written communication skills
o Working knowledge of Microsoft Word and Excel
o This position is a full time, year round
o Wage Commensurate as per CBA
