Mission Hill Family Estate was established in 1981 by Proprietor Anthony von Mandl and is located in the heart of British Columbia's pristine Okanagan Valley. This family-owned winery is world renowned for its award-winning wines and spectacular setting at the Terrace Restaurant. Majestic mountains, scenic lakes, and lush orchards encase the winery's dramatic architecture and culminate in a setting that celebrates wine, food, and the arts. The award-winning Terrace Restaurant provides one of the most glorious dining experiences in the Okanagan Valley. Offering a panoramic view of the winery courtyard, lush vineyards, and Okanagan Lake, the Terrace Restaurant provides the perfect setting to savour light, seasonal local food paired with Mission Hill Family Estate Wines. The culinary brigade is under the mentorship of Mission Hill Family Estate Executive Winery Chef Matthew Batey, CCC (Certified Chef de Cuisine), who is at the forefront of the local “Cuisine de Terroir” movement – wine country cooking with the freshest, locally grown, in-season ingredients. The Terrace was also named “one of the Top 5 winery restaurants in the world” by Travel + Leisure Magazine as well as recently listed on a Zagat list – “8 Wineries with Fabulous Food”.

Position Description: Reporting to the Executive Winery Chef, the seasonal Pastry Chef is responsible for leading the seasonal Pastry Team and taking a hands-on role in the daily creation of world-class pastry, baking, and dessert items. This working-chef position executes the unique vision of utilizing contemporary pastry techniques and combining them with Mission Hill’s world-class wine portfolio to create an exemplary culinary experience. The Chef demonstrates expert level culinary skills, superior pastry techniques, and a passion for incredible cuisine. The role also supports the administrative functions required to run a professional kitchen.

Seasonal Pastry Chef’s responsibilities include:

Creative & Production Functions

  • Produces unique from-scratch pastry, baking, and dessert items for the Terrace Restaurant and Catered events
  • Contributes to menus and daily offerings including the creation of daily specials
  • Provides an exceptional culinary experience to all winery guests
  • Demonstrates a superior knowledge of the menu, ingredients, and suppliers
  • Adheres to and engages team in a world-class level of culinary standards

Team Leadership and Management

  • Provides leadership and mentorship to the Pastry Team, playing a key role in the continuous development of all culinary staff
  • Works collaboratively with the entire culinary brigade and service teams
  • Develops and maintains a strong internal culture within the brigade, upholding morale
  • Accountable for Pastry Team performance, completing 30 and 90 day performance reviews
  • Follows and enforces all company policies at all times
  • Consistently represents the Mission Hill Brand in a professional way when representing the winery at on- or off-site events

Administration & Logistical Functions

  • Contributes to menu costing and tracks all food related costs associated with the Pastry Team
  • Collaboratively creates, places, and receives orders for ingredients
  • Ensures a safe and sanitary working environment, adhering to Food Safe standards
  • Ensures all food products are put away and stored properly, including proper labeling, rotating, and storage of all food ingredients in the coolers, freezers, and dry storage

Seasonal Pastry Chef’s qualifications include:

  • Minimum 3 - 5 years of progressive culinary experience in a senior pastry role with first class properties of international repute
  • Minimum 2 years of supervisory experience leading culinary brigades, including menu design, costing, purchasing, inventory control, and training
  • Experience in Relais & Chateaux or Michelin starred establishment considered a strong asset
  • Interprovincial Journeyman’s Red Seal Certificate or international equivalent
  • Demonstrated understanding of budgeting and controlling costs in a kitchen
  • Passionate about cooking and fine dining
  • Superior technical knowledge of contemporary pastry, dessert, and baking styles
  • Experience in food and wine pairing
  • Current “Safe Food” certification (or equivalent)
  • Comfortable with the physical requirements of the position including bending and reaching, pushing, pulling, lifting and carrying weights of up to 50 lbs., standing for long periods of time, navigating stairs, and working in a busy kitchen environment
