Reporting to the owner and General Manager, responsibilities and essential job functions include but are not limited to the following:

*Ensure the finest quality and value of food products are available and presented to guests with emphasis on Italian certified products and local ingredients

*Develop and prepare menus focusing on Italian regional cuisine, Italian culinary trends, presentation and market needs

*Participate actively with the management team and be open to creative collaboration on menu and general business ideas

*work together with the front end to ensure timely food service on high volume evenings

*Demonstrate consistent top quality standards with every dish

*Control all food inventories while maintaining food cost targets

*Ensure that all food and administrative kitchen operations are efficient and well organized

*Ensure all aspects of health and safety are maintained

*Lead and mentor kitchen team in a positive and respectful working environment

*Hire and manage kitchen resources with continued proper training

*Develop and maintain supplier relationships with ability to negotiate optimum ingredient costs

*Available and interested in media opportunities to showcase food & restaurant, as well as periodic trips to Italy for research and inspiration

*Ensure that all kitchen equipment is in good working order and is properly maintained and utilized


*3 - 5 years experience in a similar position

*Qualified skills based on educational certification and experience

*Passion for Italian food with expertise in Italian cuisine; an Italian candidate or work experience in Italy a bonus

*Experience in high volume settings with the ability to adapt and maintain balanced approach

*Understanding of Kitchen Management and System Fundamentals

*Menu Development & Food Purchasing/Costing

*Excellent Communication Skills

*Proven track record as an administrator, trainer and developer, as well as a team player with strong communication and organizational skills

*Demonstrated ability to build a strong kitchen team through recruitment, training and organization

*Strong leadership ability with specific strengths in quality production and market trends

*Comprehensive understanding and working knowledge of wines and viticulture

*Proven ability to achieve fiscal targets through implementation of inventory control & costing logistics

*Working knowledge of Microsoft Word and Excel applications

Visa Requirements:  Must be legally eligible to work in Canada.

Full Time: Wednesday to Sunday evenings, with occasional private lunches, as well as periodic private events on Mondays and/or Tuesdays.
