KITCHEN MANAGER (KM)
POSITION: Kitchen Manager (KM) REPORTS TO: General Manager
SUMMARY OF WORK PERFORMED
The Kitchen Manager is responsible for the day to day operation of the Boston Pizza kitchen under the direction of the General Manager. This includes conducting the affairs of busi-ness in regards to the kitchen, the purchasing, receiving and preparation of all foodstuffs, according to company policies and practices, the staffing and scheduling of the back of the house staff and the on-going training, supervision and development of the kitchen staff.
DUTIES AND RESPONSIBILITIES
Conducting the Affairs of Business
The Kitchen Manager’s focus will be on maintaining three priorities;
1. The Health and Safety of all GUESTS.
2. Operating to Boston Pizza International’s systems and standards.
3. Ensuring operational profitability.
The Kitchen Manager will be responsible to the General Manager for ensuring that all products received meet Boston Pizza International Inc. specification, that the invoicing is correct in respect to quantity, quality and price and that the products are properly dated, rotated and stored. They will ensure that all products are prepared according to Boston Pizza systems and standards ensuring a high quality product presentation at all times. The Kitchen Manager will maintain control over prescribed food and labour costs and other kitchen related operating expenses.
Kitchen Staff Supervision
o The positions of Assistant Kitchen Manager and Kitchen Supervisor will be given a considerable amount of attention by the Kitchen Manager in terms of development of these individuals for future responsibilities.
o The Kitchen Manager will ensure that all the kitchen staff are properly trained upon hiring and that any approved changes to menu, recipes or procedures are communicated to the staff and effectively implemented.
o The Kitchen Manager will ensure that there is adequate coverage at all times in the kitchen and will further ensure that all recipe, assembly and plating procedures are followed out in accordance to Boston Pizza International Inc. specifications.
o The cleanliness of the kitchen will be a top priority of the Kitchen Manager and they will ensure that all checklists and cleaning schedules are followed. 2-6 BOSTON PIZZA INTERNATIONAL INC., 2009
Purchasing and Production of Foodstuffs
o The Kitchen Manager will buy authorized products in appropriate amounts for the level of business expected. They will ensure that the quality, quantity and handling of all products is according to the Boston Pizza System in as defined in the Food Handling Procedure Manual Volume B.
o The Kitchen Manager will seek out and attend courses that are beneficial to business and personal develop-ment, in order to upgrade his/her personal achievement at Boston Pizza.
o The Kitchen Manager will remain alert and interested in the food service industry, remaining abreast of trends and drawing to the attention of the Corporate Office any concepts or ideas that may have application to Boston Pizza.
o The Kitchen Manager
